Daal Soup

Why We Love it

Our mother’s warming daal soup is a firm favourite. Super quick to whip up, warming but light and packed with proteins and nutrients.  A quick and easy warming bowl of deliciousness that ticks the vegetarian, vegan, gluten-free boxes (if you are so inclined).

 

Ingredients

  • 1 cup of lentils (we normally use orange)

  • 2-3 chopped tomatoes

  • Sliced mushrooms (8-10)

  • 1 tsp chopped Garlic

  • Glug of olive oil

  • 1 cup of stock

  • Salt, pepper and chilli to taste

 


Method
 

  • Boil the lentils until soft

  • In the meantime fry the garlic for 1 minute or so

  • Add the tomatoes and cook for 5 mins or so

  • Add in the mushrooms and simmer for another few minutes.

  • In the meantime strain out the lentils and add to the tomato/mushroom mix

  • Dilute with stock to preferred consistency

  • If you want you can blend. We like ours with textureAdd salt, pepper and chilli to taste

  • Top with anything you fancy (ours is a seed mix) and voila
